Got Turkey leftovers from Thanksgiving? Make Turkey Pot Pie Soup!

Every Thanksgiving, I’m left with a ton of turkey. I usually make things like turkey pot pie and sandwiches out of it.

This year my mother in law called and asked if we really needed a turkey if only a few of us actually ate turkey.

I DO!

I almost shouted into the phone. I’m so adamant about getting a turkey because I love, love, love making broth with the carcass.

Turkey broth is one of my favorites, but I only get to make it once a year. And I’m not about to give that up. For a recipe check out my post on how to make bone broth.

Anyway, so I’m racking my brain trying to think of what the hell to make with the massive amount of leftover turkey meat I have.

I made paleo & grain free turkey tacos, I made turkey salad. So I head to the fridge and realize I’ve also got a ton of leftover celery, carrots, cream, onions, fresh sage, and fresh thyme.

A comforting Thanksgiving soup was born. It’s basically turkey pot pie soup. I didn’t have peas on hand but you can add those too!

  • Feel free to use sweet potatoes instead of white potatoes.
  • If you cannot find fresh sage, add savory, marjoram, or rosemary instead.

 

Turkey Pot Pie Soup

Ingredients
  

  • 3.5 cups bone broth
  • 1 cup heavy cream raw and grass-fed or use coconut cream
  • 3 tbsp butter
  • 2 carrots slices
  • 3 celery stalks sliced
  • 1 small peeled potato diced
  • 1 onion diced
  • 2 cups shredded turkey
  • 5 sage leaves chopped, about 1 tbsp
  • 1 tsp thyme
  • 1 tsp dried sage
  • optional: top with parsley
  • salt and pepper

Instructions
 

  • Melt the butter over medium heat in a big pot.
  • Add the onions, carrots, potato and celery.
  • Let cook until onions are soft.
  • Add the broth and cover the pot, letting it simmer for about twenty minutes, or until the carrots have softened.
  • Add the turkey and herbs.
  • Let them heat through.
  • Add the cream last.

  1. My very very favorite way to make yummy soup with leftover turkey is to add some of the gravy to the bone broth with all the other goodies. Give it a try next time.

  2. Super easy to put together and quick BUT I substituted coconut cream for the heavy cream and YIKES….NOT GOOD! Definitely don’t use coconut cream for a substitute.

      • Hi, I am about to try this soup and usually sub coconut cream/milk for dairy. Is the issue consistency or flavor with the coconut cream?

    • We tried it with a can of coconut milk and really liked it! Maybe the cream is too sweet!

    • I use coconut cream regularly in this recipe, and it turns out amazing so I’m not sure what your issue was.

  3. I usually have a difficult time getting my husband to try new things. I made this soup after making up a batch of turkey stock, and disappeared to do projects for a couple of days. My husband told me he has eaten the soup 3 times! I was lucky to get even a bowl! It was yummy! Thank you

        Very easy to prepare. I had cooked a turkey beast (bone in) and refrigerated it overnight. Removed the fat and used the broth for the soup. Great way to use leftover turkey. Added a bag of frozen peas instead of the potatoes. Delicious!

    • Cream, either coconut or milk-based does not freeze well. Make the soup with all of the ingredients except the cream, freeze and then when you thaw it to use, remember to add the cream in.

  4. Has anyone used a substitute for the butter? I can’t have any dairy (so also no ghee).

      Whichever oil you prefer for cooking. Maybe olive oil as coconut would add too much unwanted flavor to the soup.

      I would cook the quinoa separately, and add it to your bowl, then spoon the soup over. Sounds good!

  5. I’m wondering how this is paleo? As the true paleo diet does not allow potatoes nor dairy?

      You’re right, it’s not paleo. But it is made-from-scratch and delicious!

  9. I Made this tonight( yesterday was ??Canadian Thanksgiving) it was so yummy, I did add some peas! I will definately make again, love the idea that someone posted about using a rotisserie chicken, may try that if Turkey isn’t convenient! ?? Thanks for sharing this, made it pretty much almost all Keto, except for using about half of a small potato!

    Thus recipe is delicious and packed with nutrition! I put my turkey carcass in my crockpot with salt, garlic and apple cider vinegar for 24 hours. The house smells amazing!
