This was no joke one of my favorite lunches ever, and it came together in under 20 minutes. And I may have had the same thing for dinner…and then again for lunch the next day.

Ya know what they say, simple food is the best food.

The other good thing about this is that you can make all of the ingredients in bulk to throw together, or use for other meals.

Chicken:

Cut up 1 large chicken breast and sauté in bacon fat with a couple of drops of liquid smoke.

Rice:

Cook the rice according to package directions. Add chopped up cilantro. You can also use cauliflower rice if you don’t do rice or if you are strict paleo. Drizzle some lime over it to make it taste more like Chipotle’s rice.

Pico de Gallo:

Oh my god pico is my favorite. When we go out to Mexican restaurants, I always ask for 17 sides of it.

  • 2 tomatoes, diced
  • half onion, diced
  • 2 tbsp cilantro, chopped
  • 1 jalapeño, diced

Combine in a bowl and top with lime if you like.

Serve it all together for a quick and easy and delicious lunch. And if you’re a lettuce lover like I am, throw some shredded romaine on top.
