- small or fingerling potatoes, I used about 7
- 3 tbsp coconut oil
- 1 garlic clove, minced
- salt and pepper to taste
- Boil the potatoes until soft and let them cool.
- Smash them with the palm of your hand.
- Fry on each side in coconut oil until crispy.
- When they’re almost finished cooking, add the garlic. Make sure to add this last so it doesn’t burn.
- Serve! They’re crispy and delicious.
