Ingredients:

  • small or fingerling potatoes, I used about 7
  • 3 tbsp coconut oil
  • 1 garlic clove, minced
  • salt and pepper to taste

Directions:

  1. Boil the potatoes until soft and let them cool.
  2. Smash them with the palm of your hand.
  3. Fry on each side in coconut oil until crispy.
  4. When they’re almost finished cooking, add the garlic. Make sure to add this last so it doesn’t burn.
  5. Serve! They’re crispy and delicious.
