Change up your breakfast routine with this Easy Paleo Ground Turkey Hash recipe!

My breakfast routine is usually pretty boring. It’s always either fried or scrambled eggs, a side salad and maybe some bacon or sausage. But usually, it’s just plain old eggs and salad. And let’s face it, that’s pretty lame when you eat it every single day.

I’m always looking for ways to eat a fancier, more interesting breakfast. And since I’ve been on a ground turkey kick lately, I came up with this Ground Turkey Hash recipe.

If you’re a fan of savory breakfasts, you will love this easy paleo ground turkey recipe! It is super versatile, and it’s quickly become one of my favorite savory breakfast recipes of all time.

One skillet, about 30 minutes, and a few simple ingredients and you’ve got a hot, healthy and nourishingbreakfast that you’ll look forward to every day. You can obviously also have this for dinner – you do you!

Why I love cooking with ground turkey:

  • Ground turkey is a great alternative to ground beef. You can use it as an easy substitution in pretty much every recipe that calls for minced pork or beef.
  • I hate food waste and love that turkey lasts really well in the fridge – for up to 4 days.
  • It is super versatile and takes on whatever flavors you add. This also makes it an awesome addition to any of my Asian stir fry recipes
  • Ground turkey is much less expensive than ground beef.

Tips for making Ground Turkey Hash:

  • Serve your Ground Turkey Hash as is, or top with a fried egg.
  • Use a large skillet for this recipe. A larger cooking surface allows for more roasting aromas. A smaller skillet is likely to get too crowded and you’ll end up with sad, soggy vegetables.
  • To make your morning less stressful you can chop up all the vegetables ahead of time. Dice your veggies the night before and store them in the fridge overnight.

Variations on this Paleo Ground Turkey Hash recipe:

  • I added jalapeños because I’m obsessed with them but you can omit if you aren’t crazy about setting your mouth on fire like I am.
  • For a paleo sweet potato hash, you can use sweet potatoes instead of white potatoes. Diced squash would also work.
  • Instead of arugula, you can add baby spinach. Add it at the same time as you would add the arugula and cook just until wilted.

Ingredients

  • 1 large potato peeled and cut into cubes
  • 2 tbsp butter coconut oil, lard, etc
  • 1 Roma tomato diced
  • 1/2 red onion diced
  • 1 cup ground turkey about 1/4 lb of
  • 1 jalapeno diced
  • Large handful of arugula
  • salt and pepper to taste

Instructions

  • Melt the fat in a pan over medium to medium-high heat and add the potatoes.
  • The potatoes will take the longest to cook and you want to make sure they're soft in the middle when this dish is finally done. I cooked them alone for about ten minutes, stirring regularly so they didn't get stuck to the bottom of the pan.
  • Then add the tomato and onion. Cook until they've softened.
  • Add the turkey and make sure it's cooked completely.
  • Add the arugula and jalapeño. I like to add these at the end because the arugula cooks quickly and the jalapeño just needs to be heated, not fully cooked.

Notes

  • Serve your Ground Turkey Hash as is, or top with a fried egg.
  • Use a large skillet for this recipe. A larger cooking surface allows for more roasting aromas. A smaller skillet is likely to get too crowded and you’ll end up with sad, soggy vegetables.
