• 1 cup almond flour
  • two pastured eggs
  • 1 cup cheddar, shredded (I used white cheddar but I actually don’t prefer it)
  • 2 jalapenos, diced
  • 1/4 teaspoon baking soda (aluminum free)

  1. Set oven to 350.
  2. Combine all ingredients and shape into muffins (above).
  3. Bake on parchment paper for 15 minutes, or until golden.

I eat these with bacon, eggs, turkey, mayo, avocado, lettuce and tomato (but not all at the same time, although that would be good too). I’ve even used it as the English muffin part of my eggs benny, which was awesome.

Ooo, these look amazing. I’m thinking tomorrow morning. I think I even have all the ingredients if I skimp on the pepper!

    Thanks Dani!
