This One-Pot Chili Recipe is the perfect addition to your meal prep routine!

I’ve been craving chili like a madwoman for two weeks now, and only recently finally pulled all the ingredients together to make it.

OMG it was so good! Hearty, umami-packed, a bit smoky and slightly spicy from the added chipotle chili powder! A hearty homecooked comfort food meal that you can enjoy any night of the week.

Make sure to cook a huge pot – this healthy chili actually tasted better a day or two after cooking so go all out. It also freezes really well.

Why you will love this easy healthy chili recipe:

  • It is packed with lean protein from grass-fed ground beef and plenty wholesome thanks to all the added veggies.
  • By using only wholesome healthy ingredients this chili recipe is gluten-free, grain-free and low carb. Swap the butter for ghee to make this paleo-approved.
  • This ground beef chili recipe has the perfect smoky savory flavor, and it is thick in texture so feel free to bring out all of your favorite chili toppings.
  • It can be a spicy ground beef chili if that’s your thing but you can also skip the chili powder if that’s your family’s preference.
  • This chili is a one-pot recipe which means less dishes for you to clean! Yay!

How to serve this ground beef chili?

I wold recommend topping your bowl of chili with:

  • sliced jalapenos
  • grated cheddar cheese
  • sliced avocados
  • a dollop of sour cream
  • chopped cilantro

Tips for making healthy ground beef chili:

  • Though store-bought broth is quicker and easier, I do recommend you start making your own bone broth for recipes like this.
  • Can’t imagine a chili without beans? Add 1 cup of cooked black beans to the recipe.
  • If you are not huge on beef, feel free to make this chili recipe with ground turkey!

Can I make this healthy chili recipe in a slow cooker?

I was going to throw all the ingredients in my crock pot and let them simmer for a few hours, which is easy and you can definitely do. But I wanted to eat it as soon as possible, so I just simmered it on the stovetop.
