I remember the first time I ever had banana pudding. I was in the hospital and I thought it was the best thing I ever tasted. It was bright yellow.

Probably from toxic food dye. But you don’t think about that when you’re 7.

After making my easy 5 minute paleo pudding last week, I was stoked to make more. I mean, it’s the easiest dessert I’ve ever made and you can customize it a million different ways, which is why I plan on making chocolate pudding later today.

pudd-1024x964I topped it with whipped coconut cream (you just blend the thick part of coconut milk with some honey) but I whipped it really quick because I was being impatient and it fell.

I’m not good at being patient when pudding is involved.



  1. Heat the coconut milk over medium heat.
  2. Dissolve the gelatin into the water.
  3. Slowly add the gelatin into the coconut milk.
  4. Add the raw honey and vanilla.
  5. Mash the banana and add it in, or throw all of it in a blender.
  6. Chill for at least an hour.

So good!

          The gelatin doesn’t make it chunky unless you aren’t dissolving it in water first. Are you not mashing the banana well enough maybe?

    I made this and it tasted great except it was too runny! How long am I supposed to heat everything on the pan?
