I have a confession: I like vanilla more than chocolate. I know, I’m one of those rare unicorns, because my friends and boyfriend constantly remind me how superior chocolate is over vanilla. I get it, chocolate is delicious. I really, really like it. But I’d take a vanilla cake with vanilla frosting over chocolate any day. Except for today. Because I made some seriously delicious brownies. And they’re paleo brownies, to boot. I’m not a fan of most brownie recipes because they just taste like boring old chocolate cake to me. “Why would I eat this, when I could be eating vanilla cake?” I wonder. Double Chocolate Chip Cookies These easy Double Chocolate Chip Cookies are paleo and made without refined sugar. The perfect sweet afternoon treat or on-the-go breakfast! 1.5 cups almond flour1/2 cup raw honey1 egg1/2 tsp baking soda1/2 cup cacao powder1 tbsp vanilla3/4 cups chocolate chips Preheat oven to 235.Combine all ingredients except the chocolate chips in a food processor.Transfer to a bowl and fold in the chocolate chipsForm into balls and bake for 10-15  minutes. I eat these with bacon, eggs, turkey, mayo, avocado, lettuce and tomato. I’ve even used them as the English muffin part of my eggs benny, which was awesome. 1 cup almond flourtwo pastured eggs1 cup cheddar (shredded (I used white cheddar but I actually don't prefer it))2 jalapenos (diced)1/4 teaspoon baking soda (aluminum free) Set oven to 350.Combine all ingredients and shape into muffins (above).Bake on parchment paper for 15 minutes, or until golden. Simple Snack: Prosciutto Wrapped Avocado

In Ditch The Diet I provide one simple snack idea everyday. So how in the world was I in my kitchen the other day talking to myself, saying “I’m hungry. But not that hungry. I want a snack. I can’t think of anything.” And then I realized I had eight weeks worth of snack ideas in DTD. I literally opened my computer and referenced my own program for snack ideas. Duh! I had prosciutto, and I had avocado. What a genius combinations. Salty from the prosciutto and creamy from the avocado. Protein and healthy fats to keep you satiated. Simply wrap some good quality prosciutto around slices of avocado. Is this not the simplest snack idea ever??
