My husband is a chocolate chip cookie monster. It’s his favorite cookie. On Wednesday I made a big batch of these cookies (which I’ve been perfecting for a while) for our friend’s birthday today. I’m always trying new ways of incorporating coconut oil into my diet but can’t stand the taste of it when I’m just scooping it out of the jar, chewing it until it melts and swallowing it. Deviled eggs are one of my favorite snacks ever. They’re easy to throw together and insanely healthy. I upped the nutrient density by adding salmon roe. In traditional cultures, fish eggs were reserved for men and women planning to conceive, pregnant women and growing children. It’s definitely a fertility food. Egg yolks are rich in vitamins A, E, D and K as well as choline – a necessary nutrient for pregnancy. Both the egg yolk and fish eggs are rich in omega-3s and the fish eggs are high in vitamins A, D and C and a great source of B12 and folate. I’ve found that a lot of people think fish eggs will taste super fishy, but they’re more salty than anything. Today is Cinco de Mayo, and like any good Arrested Development fan, yesterday I celebrated Cinco de Cuatro. In doing so I made this Shrimp & Avocado Salsa. It’s easy to throw together and it’s a super nutrient dense meal. Because I’m planning on getting preggers soon, I like to make sure every meal I’m eating is loaded with vitamins, minerals and healthy fats.
