Kimchi rice has quickly become my favorite post-workout meal. It’s full of healthy fats, probiotics, protein, veggies, and glucose. Kimchi is fermented cabbage and spices and it’s the national dish of Korea. Some Korean homes even have a separate fridge just to store kimchi. I learned that on House Hunters International. It’s quick and easy to prepare for a post-workout recovery, too. Jalapeño Cilantro Deviled Eggs

I’m obsessed with deviled eggs. They are freaking delicious and make the best snacks! Plus, eggs are rich in vitamins A, E, D and K, choline and the beneficial omega-3 fatty acids, EPA and DHA. They’re basically multivitamins, ones that you can actually absorb and easily digest. These are also perfect for parties. You don’t have to add the jalapeño ring on top, but I am in love with spicy food so I of course do. Greek Goat Cheese Stuffed Mushrooms

Greek food is my favorite food. Dill and oregano are two of my favorite spices and they work really well in these stuffed ‘shrooms, but feel free to add or omit any spices. You can also use feta cheese instead of goat cheese, which was my plan until I realized I didn’t have any feta. I also added red pepper flakes, because I’m obsessed with all things spicy. Let’s be honest, most people think liver is disgusting. The truth is that liver is pretty delicious, especially if you make it right. Broccoli & Tomato Quiche

I don’t know about you, but the last thing I want to do as soon as I wake up is cook breakfast (whether it’s for me or someone else). I always recommend and factor batch cooking into my meal plans. It just makes life so much easier. You cook once and have breakfast for the entire week. This quiche was beyond and easy and tasted amazing. It’s also an extremely healthy and balanced breakfast. It is full of vitamins, healthy fats and omega-3s from the eggs (make sure to buy pastured eggs) as well as veggies and grass-fed cheese. This quiche take about 6 minutes to assemble, 40 minutes in the oven and you’re done. You have breakfast for the week. You can make more or less depending on how many you’re feeding.

Apparently, it’s Greek week here at AN.   Yesterday I wrote about my neverending love of Greek food. This is actually the side dish I served with the lamb stew.   It. Was. Mexican Chipotle Slaw

Scott and I are kind of addicted to Mexican food. He’s worse than I am though. At least a few times a month we’ll go to our favorite Mexican joint, El Centro (they also have organic red wine, what!). I always (literally, always) get the fish tacos. Normally fish tacos are mostly the breading and are deep fried in cheap, rancid vegetable oils (that will give you heart disease!). But El Centro’s fish tacos are grilled, then topped with a cabbage slaw, chipotle sauce, pico de gallo and avocado. It’s amazing. I ditch the corn tortilla and just eat it like a salad. While making my grocery lists and meal plans for the week, I realize I could totally recreate the slaw (or could I?). Pan-Fried Smashed Potatoes These golden crispy and delicious pan-fried smashed potatoes are the perfect side dish! Serve them alongside chicken, fish or beef! small fingerling potatoes (I used about 7)3 tbsp coconut oil1 garlic clove (minced)salt and pepper to taste Boil the potatoes until soft and let them cool.Smash them with the palm of your hand.Fry on each side in coconut oil until crispy.When they’re almost finished cooking, add the garlic.
