I am a huge fan of simple, easy dinners that taste good and don’t involve using sub par ingredients to cut corners. You really don’t need to be an experienced cook or buy expensive, fancy ingredients to make healthy, delicious meals. Prosciutto was on sale at my local organic market so I picked some up over the weekend. Last night I decided that I really wanted to take a bath around 6 o’clock. We usually eat dinner around 7, so I had to come up with something that I could just set and forget. I chopped some veggies, tossed them in herbs and olive oil, wrapped two chicken thighs in prosciutto and popped it all in the oven. It took me about 5 minutes. How easy is that?! Sometimes, I love spending a long time in the kitchen cooking. Scott will have a game on in the living room, I’ll be cooking an awesome dinner and drinking wine, and it’s really fun for me. But during the week, more often than not I am hungry and want some easy, tasty food in my stomach as soon as possible.   In this case, I have an arsenal of 20 minute meals; meals that are super easy to make and still taste great. I can’t emphasize how amazing liver is. Gram for gram it is the most nutritious food. It is a multivitamin, really.   Traditional cultures around the world consider liver a sacred food due to its high nutrient density. It’s high in vita A, E, D and K, B12, B6, zinc, folate, choline and iron.   This is why it’s so great for pregnant women and young children. Unfortunately, a lot of people dislike the taste of liver. I am really into pate, but I understand that most people are a little grossed out by eating liver. So what I like to do is mix it into things. I’ll blend up a pound of chicken livers from the farm and freeze a little bit in individual packages. I then add it to whatever I’m cooking for dinner, soup, stir fry, chili, anything really.
