There’s an Italian restaurant in downtown Silver Spring that I love called Olazzo. I regularly go there after work to get a glass of wine and hit up some of their happy hour specials. One is meatball sliders. I obviously don’t eat bread so for me it’s just meatballs. It’s actually one of the only places I’ve ever had meatballs and they are SO GOOD. Unfortunately, whenever I’ve tried to make meatballs at home, they never come out as well. Until now. I’ve literally never cooked with ground turkey before but it may be my new go-to. The texture is unbelievable. While my ground beef meatballs were tough, thick and dry – these are soft and moist (literally the worst word ever but it’s fitting here). The flavor is awesome too. It wasn’t that long ago that I first tried pork belly. Which is odd considering that I’m a pretty adventurous eater. I guess I kind of thought it was like bacon, and why would I get pork belly when I could get really amazing bacon from a great farmer at my farmers market? And then I saw that they had pork belly. I looove BLTs. I also love mayo. I know some people hate mayo, and I tend to agree when it’s that gross mayo made with GMO vegetable oils. But homemade mayo is where it’s at. This was one of the things I made with the approximate 7,475 pounds of leftover turkey I have from Thanksgiving. It was simple, crisp, healthy and tasted really good. What more do you need in a salad? I’m honestly usually not the biggest fan of salads. I’m not the best at making them. I looove Chinese food. I grew up eating it; my best friend, Jennifer’s mom would it order it weekly for us. That was back in my days of eating white bread topped with margarine topped with sugar. Who doesn’t love chicken nuggets?! Especially if you’re a kid. They’re the perfect snack and they’re so easy to make. Unfortunately, a lot of people just pop some Tyson chicken nuggets into the oven and call it a day. I mean, their commercials say it’s healthy, so it is right? Wrong. Tyson chicken nuggets come from birds fed GMOs. And the ingredients aren’t so stellar either. Chicken, water, salt, and natural flavor. BREADED WITH: Wheat flour, water, wheat starch, white whole wheat flour, salt, contains 2% or less of the following: yellow corn flour, corn starch, dried onion, dried garlic, dried yeast, brown sugar, extractives of paprika, and spices. I love me a good taco. Who doesn’t? They’re the Mexican version of sandwich and they’re spicy and delicious. Also, it’s WAY easier to make a grain-free version of a taco and make it taste good than it is to make a grain-free version of a sandwich. Have you tried grain-free bread? Not so good. Ya’ll know I’m a fan of easy, simple dinners. We got back from Roatan late Saturday night and I have never been happier to sleep in my own bed. It was amazing and I was exhausted. By Sunday I was feeling better from a week’s worth of cooking that wasn’t my own, but after going to check out a wedding venue and grocery shopping, I was not feeling my usual Sunday meal prep. Paleo Orange Chicken

I used to really love PF Chang’s. I mean, have you had the lettuce wraps? And the orange chicken? It’s all awesome. My favorite entree was orange peel shrimp. I’d get it every single time I went. But then I learned about health, and ingredients, and rancid vegetable oils, and sugar, and wheat and all that junk that goes into restaurant food. And I haven’t been back since. I recently figured out I could make my own version of the sauce that tasted pretty damn close to the original, no wheat, sugar, or vegetable oils involved.
