20 Minute Meal: Tomato Basil Chicken

Sometimes, I love spending a long time in the kitchen cooking. Scott will have a game on in the living room, I’ll be cooking an awesome dinner and drinking wine, and it’s really fun for me. But during the week, more often than not I am hungry and want some easy, tasty food in my stomach as soon as possible.   In this case, I have an arsenal of 20 minute meals; meals that are super easy to make and still taste great. And honestly, due to meal prepping, this dinner took me less than twenty minutes, more like 15. Grilled Eggplant And Tomato Caprese This easy Grilled Eggplant and Tomato Caprese is healthy low-carb appetizer or side dish perfect for the upcoming bbq season. Marinade1 bunch of basil leaves1.5 cups olive oil1-2 garlic clovesred pepper flakes (optional)salt and pepper to tasteVeggies1 eggplant (sliced)3-4 tomatoes depending on size (sliced)1 ball of mozzarella Blend marinade ingredients until smooth.Marinate the sliced tomato and eggplant for at least one hour.Slice the mozzarella.Heat up an outdoor grill, or a stovetop grill to medium heat.Grill the eggplant until soft and has pretty grill marks.Grill the tomato on either side for about two minutes.Stack the eggplant, then the mozzarella, then the tomato.If you like, top with olive oil.

I have finally done it. I’ve found a recipe for grain-free pizza that doesn’t include any crappy ingredients. I’ve been searching for this for YEARS. There have been so many cauliflower pizzas in my house (which really are nothing like pizza, you can’t even hold a slice of it like pizza) and almond flour pizzas (which have bad texture and well, taste like almond flour). I did this in the Vitamix. I like to blend my ground beef, it makes it moister. Alternatively, you could chop all of this and mix it together by hand.Form into 4-5 burgers.Fry in coconut oil, lard, etc. for about two minutes on each side. I served my on spinach salad but you could also go for a gluten-free bun.

  Primal Cheesy Eggplant Bake An easy and delicious low-carb bake that is absolutely perfect served with cauliflower rice or a green salad. 1 eggplant3 tbsp coconut oil1 block of Kerrygold cheddar or your favorite cheese1.5 cups spaghetti sauce Peel the eggplant and slice it into strips.Preheat the oven to 400.Saute the strips of eggplant in the coconut oil, adding the coconut oil as you need it. Let the eggplant cool a bit.In a baking dish, add 1/2 cup of the spaghetti sauce to the bottom. While the eggplant is cooling, slice the block of cheese into strips. Wrap the eggplant around the cheese. See below.Do this for all the eggplants and cheese. Cover with more cheese and the remaining spaghetti sauce.Bake for 15-20 minutes.

I love eggs benedict. Anytime I go to brunch, which is kind of a lot because brunch is awesome, I always get eggs benedict without the English muffin. Unfortunately, it’s not very filling without the English muffin; so I always ask for a third egg…and extra hollandaise (love that shit). So I’m not only asking for a modified order with no muffin, I’m also asking for an extra egg and extra hollandaise sauce. Yes, I am that girl. I always apologize in advance for my complicated orders.
